You Say Tomato, I Say Tomato...


Last weekend Emily cooked up a big batch of Green Tomato Chutney which looks absolutely delicious! She stored it in jars and is keeping it for Christmas presents (we have our fingers crossed that one will appear at Highland Angel HQ!) which got us thinking that it would be a fantastic recipe to share with just 10 weeks until the big day! If you'd like to make your own, here's how...



Ingredients - makes about 6 small-medium jars
1200g green tomatoes
2 large onions
500g sultanas
500g dark brown sugar
2 tsp cayenne pepper
2 tsp nutmeg
2 red chillies
1 litre malt vinegar


Directions
1. Chop everything, no need for perfection, and put all ingredients into a heavy based pot.
2. Bring to the boil and simmer for 1-2 hours or until you have a thick syrupy mixture. A good way to tell if the chutney has cooked for long enough is to draw your wooden spoon along the base of the pot - if the vinegar runs straight back into the path you have made, it needs more cooking time.
3. When cooked, leave to cool then spoon into sterilised jars.
4. Label and store in a dark place for up to 3 months to let the flavours develop.
Should be delicious just in time for Christmas!
