Nice As Pie

Piece of Cake - Pumpkin Pie

Happy Thanksgiving everyone!

When it comes to celebrating the best of America, nothing tastes better than pumpkin pie - and nobody bakes it better than Martha Stewart.

This is one of our favourite winter recipes (http://www.marthastewart.com/355555/pumpkin-pie) - a perfect slice of sugar and spice. Enjoy!

Ingredients - crust
2/3 cup plain flour
1/3 cup wholewheat flour
1 teaspoon sugar
1/2 teaspoon salt
6 tablespoons cold butter, cut into cubes
2 teaspoons cider vinegar
2 tablespoons cold water

Ingredients - filling
1 1/2 cups canned pumpkin puree
2 large eggs
1/2 maple syrup
1/2 cup milk
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup soured cream for topping

Directions - to make the crust
Preheat the oven to 375. Stir the flours, sugar and salt in a medium bowl until combined. Cut in the butter then stir in the vinegar and ice water until the mixture comes together. Refrigerate for one hour, then roll into pie plate.

Directions - to make the filling
In a large bowl, combine the pumpkin puree, eggs, maple syrup, milk, vanilla extract and salt. Pour into the unbaked pie shell. Bake for 50 minutes or until set. Transfer to a wire rack to cool then serve with a dollop of sour cream.
